
It's like eating Orange Marmalade, kind of. The rind is similar to an orange rind, but more edible. The middle is tangy and a little salty. They're lemony and orangey, but also different all on their own. I'm totally taken with them.
I had a handful for dinner last night - 5 total. About 80 calories, 6 grams of fiber, 73% Vitamin C. They have lots of other vitamins and minerals. too. Yum! And, they're easy to eat slowly and make a nice dessert.
I have no idea what to do with them as far as cooking goes, though. I think you'd almost need to make a jam.

crazy!!! you just eat the whole thing?? mmm i love marmalade!!!! i want to try these things, but have never seen them in a store before. maybe WF will have them.
Trader Joe's had them, and I think that's the first time I've seen them. So weird. I think I couldn't eat more than 4 or 5 though, because it's such a strong taste.
I see lots of references to salads, salsas, and jams with them. Or preserved in booze. A chutney also seems like it would be good.

I've never tried a kumquat either, but I had no idea you eat the rind too! How odd... but apparently delicious ;)
